One of my favourite hearty breakfasts! I need something substantial in the morning, more than coffee and carbs. This is a very flexible recipe. Start with the basic ingredients, I like Soyarie tofu (made with organic non-GMO, Canadian grown soybeans), then add to it according to what you have on hand (pictured above with spinach). I really like the texture of chickpeas, celery and sweet peppers; a nice balance with the soft tofu. Keeps well in the refrigerator and can be quickly warmed up in the microwave for an instant healthy breakfast.

Serve with mixed whole grain or whole wheat toast or bagel, the original One Bun is my favourite, and breakfast sausage. Dress up your plate with slices of cucumber, beets, sprouts, cherry tomatoes or my favourite, homemade sauerkraut. Try a spoonful of ketchup or chutney. Don’t be afraid to adjust the seasonings according to your taste. Experiment; be adventurous!

Ingredients

1 package of soft, silken tofu, cubed
1 small onion, finely chopped
2-3 tbsp tahini (sesame butter), to taste
2-3 tbsp soy sauce, to taste
1 tsp turmeric
1 tbsp cider vinegar (or lemon juice)
1 tbsp coconut oil or other good oil for frying
Salt and pepper, to taste
Try hot smokey paprika, vegetable salt, curry, fresh herbs

Instructions

Heat oil in nonstick frying pan; add onion and sauté until soft and beginning to turn golden.
Add celery and peppers, if using. Stir and sauté another minute.
Add tofu cubes; gently break up into veggie mixture.
Add cider vinegar, tahini, soy sauce and any seasonings you want to add; stir to mix.
