A couple of years ago, my daughter gave me a bag of kale chips, which I promptly devoured in total amazement. Mmmmmm! After purchasing a dehydrator, I went out in search of recipes. Having played around with several recipes, this is the kale chip recipe that works for me–and for those dropping by my condo, from what I hear…:-)

Soupe aux gourganes, a real taste of Lac-Saint Jean! Years ago, my mom and I would shell huge bags of “gourganes” to make soupe aux gourganes, a very filling soup, perfect for chilly winter days. I was thrilled to find gourganes in the frozen foods section at Adonis. These hearty, flavourful beans are also known as fèves des marais, broad beans, wetland beans or fava beans, although I’m not sure that fava bean is an accurate name. These extra large beans turn brown once cooked, and have an almost beefy flavour, perfect with a grilled cheese sandwich.

Tofu Breakfast Scramble

One of my favourite hearty breakfasts! I need something substantial in the morning, more than coffee and carbs. This is a very flexible recipe. Start with the basic ingredients, I like Soyarie tofu (made with organic non-GMO, Canadian grown soybeans), then add to it according to what you have on hand (pictured above with spinach). I really like the texture of chickpeas, celery and sweet peppers; a nice balance with the soft tofu.

I love black bean stew! It’s my basic, every day comfort food–the perfect every day far. I will serve it on brown rice, mixed grains, rolled in a tortilla with some shredded cheese or with my favourite, quinoa. This dish is so simple to make that it hardly warrants a recipe. But, since several people have expressed that they don’t know their way around a kitchen, I decided to share this simple recipe.
