Who doesn’t love carrot cake? I found this lovely recipe in The Joy of Vegan Baking, tweaked it a bit: reduced the sugar, replaced walnuts with almonds and simplified the instructions. You know me, my kitchen is my lab; can’t do a recipe without playing around with it. I also like to bake it as cupcakes; easy to frost and freeze. Just pull a couple out when I have guests.

A while back, I treated myself to a wonderful new cookbook, But I Could Never Go Vegan. Since I’d been craving peanut butter–no idea why!–and, company was coming later in the day, I thought I’d make them a treat. This is a simple recipe and yes, very yummy! Chocolate and peanut butter… match made in heaven! And I have made it again, and again!
For those moments–no doubt, very occasional 🙂 –when you need that chocolate fix, these brownies will do it. Half of one does the trick for me! These brownies are somewhere between lava cakes and hot fudge…. This is a very quick and easy recipe! It makes a dozen brownies, which I freeze in their papers, and pull out when the urge for chocolate hits me! Great for when you have unexpected guests; everyone just loves them!
