I love the delicate, mysterious flavour of matcha… somehow, it manages to wake up taste buds that have lain dormant for a long time, something I discovered when I created matcha bites, my all-time favourite treat.

Ingredients

1 cup vegan butter, softened
½ cup sugar
1 teaspoon vanilla
2 cups flour
1 cup coconut
1 tablespoon matcha powder

Preparation

Cream butter with sugar and vanilla.
Add flour, matcha powder and coconut to creamed mixture. Stir to mix well.
Roll dough on plastic wrap into long log; chill a couple of hours to firm up.
Slice dough and place 1 inch apart on cookie sheet (oiled, or covered with parchment paper).
Or, simply scoop out dough, shape into small balls, and flatten on cookie sheet.
Bake in 350°F oven for 10–12 minutes.
